Sausage & Cheeese Breakfast Bites

This is a great low-carb breakfast recipe to grab and go! You can freeze and reheat easily. They are KETO friendly & gluten free.

INGREDIENTS

1 lb. breakfast sausage

4 oz. cream cheese softened

3 eggs

1 cup shredded cheddar cheese

handful baby spinach chopped (optional)

1/3 cup coconut flour

1/2 tsp. baking powder


Directions:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper or Silpat sheet.

Cook the sausage in skillet over medium heat. Drain and set aside to cool on paper towel lined plate.

When sausage has cooled, add into mixing bowl with cream cheese and mix until cream cheese is smooth. (You want sausage to not be hot so as to not "cook" the eggs when you add them in)

Stir in cheese, eggs, flour & baking powder.


Let set for 5 minutes to thicken up. I divided my mixture in two and added spinach to one batch before scooping out my bites. You can add spinach to the entire batch or eliminate completely if desired.


Using small ice cream scoop, place the bites on the lined baking sheet. Bake for 18-20 minutes.
