Chicken Fritters

Here is a new way to use up the chicken you have on hand without the basic baked chicken breast recipe. This is a fun new way to get in your protein. Great served up with a side salad, veggies or potatoes.


Ingredients

1-1.5lbs Chicken diced

2-3 eggs (I’ve made both ways - fluffier consistency with 3)

3 green onions finely chopped

1 Tbsp sour cream

2 TBsp flour

salt & pepper

Vegetable oil


Cream topping/dip

2 tsp lemon juice

1/2 cup sour cream

1 tsp parsley chopped



Directions:

Cut the chicken strips or breasts into very small cubes and add them to a bowl. I prefer this over ground chicken and think the texture is better for these fritters.

Add in and combine the green onions, eggs, sour cream and flour with the chicken. Season with dash of salt & pepper

Mix all together to a batter like consistency.

Heat a few drops of vegetable oil in frying pan over medium heat. Then drop batter into pan (about 1/4 cup) by the spoonful.


Cook each side for 2-3 minutes until cooked through, then remove from the pan and place on a plate that had been lined with paper towel. Continue in batches until you use up all the batter.

I serve mine with a dollop of sour cream mixture which I have detailed below.


Stir together the the sour cream, lemon juice and parsley in small bowl. Serve on the side or dollop on top of the fritters.
