Oven Baked Crusted Tilapia

INGREDIENTS:

1 lb. tilapia filets

2 to 3 fresh Roma tomatoes

Fresh parsley

Seasoned Panko crumbs

Olive oil

2 - 3 garlic cloves

Italian Seasoning

1/2 lemon squeezed


Directions:

Preheat oven to 375 degrees.


Chop tomatoes into small chunks and stir in 1 to 2 T. olive oil, crushed garlic cloves, chopped parsley, a sprinkling of Italian seasoning, and juice of lemon. Stir and let sit while preparing tilapia.


Spray the bottom of a glass baking dish with oil. Lay tilapia filets in dish, and lightly drizzle with olive oil and spread over filet with a spoon or spatula. Now sprinkle the filet with panko crumbs to cover followed by tomato mixture. Place in oven and bake for 30 minutes until bubbly and beginning to brown.


Remove from oven and serve . We like to serve ours over some quinoa/brown rice and a side of veggies.
