Creamy Avocado & White Wine Pasta

Say hello to a super creamy, super healthy and super deliciousness pasta dish!!

INGREDIENTS
16 ounce(s) of Whole Grain Pasta (can substitute gluten-free, too)
4 Ripe Avocados
8 ounce(s) Vegan Cream Cheese (if you aren't Vegan then regular cream cheese will work)
1/4 tsp. Cayenne Pepper (or more to taste)
2 Tbsp. Fresh Basil, finely chopped
1/2 tsp. Pepper
1/2 tsp. Salt
1/4 cup Earth Balance® Vegan Butter
1 medium sweet onion
1 Garlic Clove, minced
1/2 cup(s) of Dry White Wine
1 Small Tomato (roma) diced
1 cup(s) of Vegan Cheese (substitute Parmesan for non-vegan)
1/4 cup Pine Nuts
Directions
1. Cook pasta according to package instructions. 2. Combine avocado, cream cheese, cayenne pepper, basil, black pepper, and salt in a bowl. Blend with a hand mixer until smooth. Set aside. 3. Saute onion and garlic in butter until translucent. Add white wine and increase heat to medium and cook until most of the wine has evaporated. Add to avocado mixture and combine.
4. In same frying pan, toast pine nuts for 3 minutes over medium-hight heat, striring frequently or shaking pan until golden. Be careful not to burn. 4. Pour sauce onto pasta and garnish with shredded cheese, toasted pine nuts, & fresh tomatoes.
Eat alone or serve as a side with grilled chicken.
And since you HAD to open that bottle of wine, sit back and enjoy a glass with your meal!
