Easy Air Fryer Mexican Street Corn

I dare you to eat only one! No really...This is such a quick and easy side dish that is sure to please. Minimal ingredients, minimal prep, yet big impact.


I have a XL Air Fryer which does make it easier to make in large batches. If you have a smaller air fryer you may need to make it 2 batches and/or cut up your ears of corn to fit. (This can also easily be done on your grill as well for the cooking portion of the recipe)

Ingredients:

4 ears of corn

2 tablespoons of Mayonnaise

1 tablespoon of green onion chopped

1/4 cup of crumbled cojita cheese

approx. 1 tsp chili powder


Directions:

Set Air Fry at 375-400°F

Cut your corn to fit your air fryer basket. Spray or brush the corn with olive/avocado oil. (If I'm not making the Mexican street corn and just regular roasted corn I'll also sprinkle with salt & pepper at this step).


Place in basket of your air fryer and cook for 15-20 minutes, flipping half way through. Cook until kernels are tender and lightly browned.


Once your corn is cooked, take out of the air fryer and brush with mayonnaise, sprinkle with chili powder, cheese, green onions & if you have handy a little squeeze of lime.


Told you it was simple. Now go make it, eat it and enjoy it!
