Chuy's Creamy Jalapeno Cilantro Dip/Dressing

Ever been to Chuy's Tex Mex? Ever asked for their jalapeño cilantro dressing to dip your tortilla chips in? If you answered "no" to either of the above, you haven't lived!


This is great as a salad dressing (what it's intended for) but equally as great as a dip for your chips! I may or may not have eaten my weight in Chuy's jalapeño dip when pregnant with my first. Warning: it does get spicier and spicier as it sits in the fridge.




INGREDIENTS:

1 packet Hidden Valley Ranch dressing mix

1 cup sour cream

1/2 cup mayo

1/2 tsp salt

1/2 tsp garlic powder

3/4 cup pickled jalapeños (add a little juice too to adjust spice/thickness)

4.5 oz canned diced green chiles

4 Tbsp cilantro

1/2 cup buttermilk

Fresh Lime


Directions: In a medium mixing bowl, stir together sour cream, mayonnaise, ranch dip packet, garlic & salt.


Best option for your next step is a blender OR your old trusty food processor. Puree cilantro, green chiles and pickled jalapeños with a little jalapeño juice.


Add your jalapeño/cilantro mixture to your bowl with the mayo, sour cream & seasonings. Stir in buttermilk until you reach desired consistency. Add squeeze of fresh lime juice. Pop it in the fridge until you are ready to serve. Warning: it will get spicier as it sits in the fridge longer.
