Sweet Potato Hash

I always love a good “toss it all together meal” and this one is no different. You can change a few things up for a little variety, but I guarantee some version of this will be added to your go-to meal list.

Ingredients
2 medium sweet potatoes diced
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1 teaspoon paprika
1/4 teaspoon cumin
1/4 teaspoon of cinnamon
1 teaspoon chili powder
1-2 tablespoons avocado or olive oil
5-6 strips of bacon - cooked
2 avocados
1 lime
4 eggs
4 green onions sliced

Directions:
Toss sweet potatoes, oil and spices in bowl. Then add to baking sheet. Cook at 425 degrees for 20 to 25 minutes until tender and a little crisp.


While potatoes are cooking, prepare avocados into a simple & quick guacamole.
Seed and peel avocado. Mash avocados with juice of half of a lime, salt and pepper. Feel free to add some diced pickled jalapeños if you want a little spice.


With a few minutes left on the potatoes, fry up your eggs to your liking. Season with salt and pepper.

Once your potatoes are done you are ready for assembly!
I stack mine in this order:
1. Potatoes
2. Fried egg
3. Guacamole
4. Bacon
5. Green Onion




Varieties/Options to switch it up:
- swap the bacon for chorizo
- swap the bacon for ground taco meat
- slice avocado instead of guacamole
- add ranch dressing
- add black beans
