Moonlight Salad

This was a salad on repeat at my household growing up. We loved to frequent the Moonlight restaurant in Alton, IL and absolutely LOVED their house dressing. It was a great memory full of laughs with the family, amazing toasted ravioli & the best start to the meal...the Roman House Salad.


The dressing is creamy rich, & the crushed croutons instantly shoot it over the top! Mom found this copycat recipe and lucky for me I still have the recipe card in the pantry to this day...and now I get to share it with you!





INGREDIENTS (8-10 servings):

1 head ice burg lettuce (washed & chopped)

2 cups light mayo

1 envelope Hidden Valley Ranch dressing mix

1/2 cup Parmesan cheese

1/2 package of pepperoni chopped

1/2 to 1 cup season croutons, crushed


Dressing: Mix mayo, HVR seasoning, parmesan & pepperoni in bowl. Set aside in fridge until ready to serve.


Just before serving, toss the chopped lettuce, dressing & crushed croutons. Enjoy my favorite childhood salad and let me know what you think!
