Avocado Chicken Burritos

Creamy, crunchy, savory...that is the avocado chicken burrito in a nutshell. Super quick and easy, especially if you cook the chicken ahead of time. This is not the rock in your gut, heavy burrito. This is a great lighter version that is sure to satisfy.



INGREDIENTS

6 burrito sized tortillas

1.5 lbs cooked chicken, sliced or shredded up

1/2 cup sour cream or greek yogurt

1.5 cups Monterey Jack cheese or Mexican Shredded Cheese

1-2 large avocados, chopped depending on your love for avocado

1/4 to 1/2 cup salsa verde

3 TBSP chopped cilantro


Assemble all items on each tortilla (some pics below) and then perfect your burrito folding. Here is a great burrito folding video: https://www.youtube.com/watch?v=e6P87fk9F5c


**I spread the sour cream and cheese all around on outside to help the burrito (stick) together and so that cheese melts! The salsa verde is optional and could also be subbed out for regular tomato salsa too.






"Toast" your burrito in a frying man over medium heat, flipping a few times until golden brown. Cut in the middle at an angle and serve!
